latex and comfort, adjusting the 3-layer cake

I bought a 3-layer latex mattress from the Natural Mattress store (California, San Francisco bay area). I love the store and sales help, and my brain loves the mattress. I’ve been trying to solve a low back problem. With the layers listed top to bottom:
Try1: Med, Firm, X-Firm: seemed too firm (all Dunlop)
Try2: Med, Med, Firm: seemed too firm (all Dunlop)
Try3: Soft Talalay, Med Dunlop, Med Dunlop: seemed too firm
(I then visited a 3 hotels. At the third one the back pain vanished within 4 days. They have the Serta Perfect for Sleeping Hotel Suite collection: Suite Dreams, purchased about 1 year ago). It seemed soft, so:
Try4: Soft Talalay, Soft Talalay, Med Dunlop: is this maybe too soft?
If I go to sleep at 10 am, the back pain starts about 3 am and escalates until it is intense in the morning. A doctor has confirmed the problem is muscles, nothing more.
The mattress seller has been wonderful in helping me, but I feel stuck. I don’t want to return the mattress because my brain likes it, but I need to make my back happy.
** It feels as if, with all the tries, the latex compresses during the night and I feel as if I’m sleeping on a firmer surface. Is this perception real? ** My prior much-loved bed was a Sealy posturpedic firm pillow top. I’m overweight at the moment: 5’2" and about 175. The Sealy was purchased in 2009 and performed well until Dec. 2017. I need to either find the right tweak for the latex mattress or switch to Sealy. The local stores also sell Simonds, which used to not be as good as Sealy. I need an update on how Simonds compares to Sealy in quality nowdays. Thank you very much for your time. I really appreciate any help you can provide.

Thank you for your inquiry. There are a couple of different configurations I would recommend trying before you give up on the latex. I would recommend trying Soft Talalay over Medium Talalay over Firm Dunlop. If the Soft Talalay over Medium Dunlop is too firm, then Soft over Medium Talalay maybe just right. Talalay provides a slightly softer feel compared to that of Dunlop. This may give you adequate contour on top, while still keeping your support down below with the Firm Dunlop.

Your cover can change the feel of your sleep surface as well. You may want to try a non-padded 4-way cotton stretch cover (if you don’t already have this). This will allow your body to contour fully into your latex, and can help with any pressure points you maybe experiencing. A non-stretch cover will not allow you to fully contour into your latex, and can therefore cause pressure points, making the surface of your mattress too firm.
