Looking for right Latex setup, PTB alternative maybe

First off thank you for the forum it is full of great information.

Let me start by saying I believe I would like an all latex mattress based on everything I read and also laying on two PTB models, the Nature and Beautiful. I liked the soft/plush of the Beautiful however felt it might not be supportive enough, while the Nature was slightly too firm.

I read online they have a Nutrition model which seems to fall right in the middle, presumably what I think sounds like would be a good fit, however the nearest floor model is almost 100 miles away. I don’t really want to drive that far to get a better idea, however I would if it would allow one of the experts on this forum to better assist me in identifying what might be the best fit.

My initial thought is I like the idea of Sleep EZ and the custom/split sides. In theory it sounds like the best path to take, however I am not opposed to other suggestions. In my mind I feel like I may want a 4 layer vs 3, however maybe that is just my mind thinking it will be more comfortable.

Ideally I am looking for good quality that will last several years as well as be someone adjustable should my needs or hers change.

I am also looking for a adjustable bed to go with it, perhaps a S-CAPE 2 or better, I am open to suggestions.

I am a 49 YO Male, 5’11" 210 pounds, no permanent better half at the moment, but ideally assume she is 5’6" 140 pounds. I do have lower back issues and frequently have RFA procedures to numb/kill the nerves. I currently sleep on a 13 YO Englander 21st century ultimate Visco, I believe a spring memory foam hybrid, which has indentations now and I sink in a lot, except the very middle, and I believe causes a lot of additional back pain.

Based on the information you so kindly provided, should you choose the 13" model, I would recommend a configuration of Medium (Talalay), over Medium (Dunlop) over Firm (Dunlop) over XFirm (Dunlop). At 210lbs, the medium Talalay on top will provide the contour you will need, while the M/F/XF Dunlop layers below offers gradual support. The medium over medium layers on top will provide a nice plush feel, without sinking too much. We have found that over the years this configuration is most popular for customers that are primarily side and/or back sleepers, weighing between 180lbs and 220lbs.
Should you accommodate the other side of your mattress for a person weighing 140lbs (side and/or back sleeper), we would recommend Soft (Talalay) over Medium (Dunlop) over Firm (Dunlop) over XFirm (Dunlop). As the medium Talalay will provide contour for you at 210lbs, the soft will offer similar contour for someone at 140lbs.
