All I am seeing is 15+ inches deep pockets for mattress tencel covers on amazon, can I buy those to stuff my foams inside a 10 inches foam mattress? Or must it strictly be a 10 inches pockets cover?also must it be quilted or non quilted cover? To prevent night sweats from spilling into it

Whether you want it quilted or not is going to be up to you, but you can find encasements for 10" mattresses on sites like DIY Mattress and DIY Natural Bedding.
A little extra space isn’t going to hurt the mattress, but 5" of extra space may create some uncomfortable bunching or gathering of extra fabric under your bedding.
