trying to match an existing mattress

Another new person here. Struggling with finding a replacement mattress, like so many others.
We’ve had a serta vera wang latex in a queen for about a decade now. On it’s own, it’s slightly firm for us, but after adding a soft 3" latex topper and a 1" memory foam topper, it’s been very comfortable. albeit a major pain to keep them on the bed, as most sheets just aren’t deep enough as our “sandwich” is over 18"

most mattresses we’ve tried in stores seem too firm. Save for the tempur luxe breeze which feels like a possible candidate

However, we’re looking to move to a king size, and finding something as soft has been all but impossible, plus with an allergy to wool, and several other allergies, options seem rather limited.
I would like to pose 2 questions with the following info.
Me, 6’2" 205#, her 5’ 130#. Both mostly side sleepers with some back from time to time. Both of us are rather sensitive to shoulder pain and arm numbness. to the point where we simply travel with a latex topper wherever we go.

  1. Given those numbers, what kind of configurations would possibly be suggested. - and can something even be possible in a mattress 13" or less?
  2. regarding the wool in the mattress covers - is it generally encapsulated, or is it an integrated part of the cover fabric? Encapsulated might be a doable option as long as it stays contained.

I would however recommend a customizable layered mattress model for you.
